I left the sign just near the bonfire in Farron Keep Perimeter, password KKK, upper case.
Their movements have large intervals, you can hit ONE hit (not two hits, not enough time), then roll back.
Shields won't help, because they have a 3 series hits which normally consumes all your stamina.
When he attacks you, roll straight through his sword and land two quick hits from behind. Two is enough to both poise break and frost bite him. If you have enough stamina, hit him a third time while he is stunned. If the hammer is +2 then he will die from the third hit. If less he'll need 4 or 5 hits.
Easy peasy.
There are ways to cheese him, like others have mentioned. But I always feel bad about cheesing the humanoid enemies. With all the cheap ass monsters you have to fight, you should show some respect to the ones who fight you like a man.
Walk towards him like your going to do a backstab.
When your foot hits the first stair do a strong attack, at this point the knight will turn around and do a strike. But it seems that when he does this he turns around again so he hits the other direction. This gives you time to get another two heavy strikes in.
That should get him down to more then 50%.
Edit: this works 100% on PS4 I can't say for sure on PC.
I think it's kinda luck thing that he hits another direction. I mean I have seen he hits the wrong direction while standing on stairs, but it doesn't happen very often.
Moreover, the stairs give so little space that you literally can't dodge his heavy attack....
And one more thing, for those players whose hp is below 1000, don't save Ersta. Always drink to full health in battle. Cause 2 hits from him and your 80% of health will be gone.
And, although some advice says taking the cut to his back, then try sneak behinds him and backstab.
I haven't succeeded in this thing even once. Cause every time I was near enough to perform a backstab, he turns 90 degrees around and it's impossible to be quick enough to move behind him...
Use the "dark hand" to kill him easily with.
