How do I make a tank build?
I may or may not make this for my next character, how do you do a proper tank though? What's the secret?

GreatShield (two hand it)
Skull Ring (kill the guy on the throne after you give him the boss soul making item)
Stats
Str (high enough to wield your GS two handed)
Endurance (main stat)
Vitality (Raise this so that you can wear heavier armor and increase your defense stat)
Vigor (For hp duh)

ring of steel protection chloranthy ring heavy armor lots of hp blue tearstone ring lloyds shield ring a weapon with perserverance and something light to parry with like leather shield.

Treads.
well plated and angled armor. (to deflect those pesky tank shells and bullets)
a man mountable MG.
A long Barreled cannon to fire rounds from.
some circuitry and computer bits and pieces.
and a bad enough crew to make it all work in perfect harmony.
Some assembly required.

Depends on what your goal is really. There is a difference between a PVE tank, and a tank in PVP who doubles as a salt delivery wagon.
I am going to assume the meta level of sl120.

The secret is that you have to go full out.

50 vigor
Ring of Favor+3
Life Ring+3
Ring of Steel Protection+3 and other resistance rings as needed
A set of heavy armor
Stength build
Put points in vitality, maybe around 20 vitality.
Finally, use weapon that makes use of poise, a weapon with the WA perseverance, a weapon with a shield, etc...

You can still match with SL 120s, even at 141. If you want something closer to 120, then lower dex to 15. You lose some AR though.
Nah, as long as I can access the sl meta it's fine.

If you prefer another sidearm, you could remove the small shield for a caestus, and shift a few points into VIT to use something. But I highly recommend a sidearm. Some people will just sit back and avoid paired UGS users, then pick them apart with single pokes. With a thrall axe, I can rush those players down who're trying to avoid me and club them like a baby seal.
