Can you keep going after you've finished the game?
I'm looking to 100% the game but I'd hate to advance to a point where you can't return. Is there a definite stopping point in terms of progression where I should stop if I want to do completionist stuff?

Short answer, yes you can keep going after you've finished the game.

Long answer: There's a bench right before the final boss and a plaque that once you read gives the completion percentage. Once you beat the final boss you can still load into your save and it will put you at the last bench you sat at.

The only "point of no return" in the game is once you've acquired a certain item you cannot get the normal ending anymore, so you have to start a 2nd playthrough if you missed out on the achievement for that.

I'm working on getting the last Dreamer atm so I'm a bit nervous about going to far. Is this item something that I will know what it is when I get to it?

This item is completely optional and you probably haven't encountered it yet. Spoiler: it's an altered version of the last charm in the 4th row. You can collect the charm without being locked out of the normal ending - you have to do some extra steps before it changes to something else.

So just to be clear,
I can go for the first ending,
reload my game,
then try for the 2nd and 3rd endings,
all in the same playthrough?

Yes. You have to get the first ending before doing the white palace and associated quests though (Not actually, but the white palace is a good fairly spoiler free landmark for progress. You can't lock out the first ending without first completing it).

Now that I think about it, wasn't that the case with Castlevania Symphony of the Night as well?
