Morrowind (wide-open world, handcrafted everything, no handholding, fast travel implemented in an immersive way) + Shadow of Colossus (boss fight mechanics) + Risen (quite a challenge, especially early on), plus quite an intriguing story, albeit one that you won't understand fully until it's time for New Game+.
