Perfect nimble is -15 to max fatigue from combined armour and helmet. Loosely, there are 3 tiers of this setup:
Tier 3
Lamellar Leather Armour: -10 (95)
Sallet Helm: -5 (120)
Tier 2
Assassin's Robe: -9 (120)
Assassin's Face Mask: -6 (140)
Tier 1
Named Barbarian Armour: -10 (180)
Named Helmet: -5(?)
80-100 HP it doesn't hurt to go -16 or -17 fat if the extra weight seems worth it.
Nimble bros with ~70 HP or lower can actually benefit from somewhat heavier armor, especially famed pieces, to get into the ~200 armor ranges for better protection. They can go with -25 or even -30 fat.
The bigger the fat penalty and the heavier the armor, the more it pays off to take battleforged on top of nimble. This is referred to as "nimbleforged" on these boards, but it's quite exotic as you need good famed pieces and a low HP bro worthy of them to really make it shine.
The limitation is that getting Assassin armors is not easy to do as daggering them down can be dangerous and they are pretty rare outside of fighting the South in the Holy War.
Nerd mentioned the cheap alternative which is the Lamellar/Sallet set, but even before you have Sallets you can use a regular Nasal Helm (105/-5) until you get there. This stuff drops from Raiders and is easy to get.
Noble Mail (160/-15) is an option for bros with lower hp (sub 80), as going over the 15 weight limit in this case can be worth doing. Noble Mail is pretty strictly inferior to Robes though if you have them. One option for Noble Mail is to use Brow and wear a zero weight hat such as the Necro Hat/Assassin Mask for 40/-0 or Desert Stalker Headwrap for 45/-0 (but these are hard to find/get). This way you still get a perfect 40% Nimble, decent body protection, and Brow to shrug the headshots, but it costs an extra perk to do this, and it will be worse overall than Nine Lives for durability in exchange for having great injury avoidance.
An option for bros with very high hp (120+) would be the Barbute (190/-9) hat with a Necro Shirt that has Bone Plates or Lindwurm Attachment. This gets you either 190/60/-15 with Bones to take a hit or 190/120/-16 with Lindwurm. The reason you want high hp on this line is because you need to survive long enough to get hit in the head multiple times to get value out of the heavier Barbute hat, which is more likely the more hp you have. Otherwise you are better off using a lighter hat so you can get more body armor.
If you have famed armor then of course that should be your best option, as long as it isn't too heavy.

Anything that combo's out to -15 fatigue loss, to give a general answer though, if you want the 'perfect' Nimble, if you haven't bothered to actually look at what the perk says, or read anything here. Like others said, 9 months ago, going over is worth it a few points if you have a low HP bro.
Note: Literally the first handful of results with a web search will pull up some ridiculously detailed analysis of Nimble builds, and all the Nimble/<Insert Perk> builds.
