I can't think of any lore reason either, except for maybe Monk because of the religious clash.
I think it's just a matter of RNG, as usual. I mean, we do have rare people that never find famed equipments even after 400 days in despite destroying many many bands and settlements

so to answer your question: you can convert poachers (they are lowborn) you cant convert hunters (they arent lowborn) unless the hunter has the dumb trait - then you can convert him
Hm thanks but not sure I trust the wiki. Some things are clearly incomplete for example the old gods event isn't (or wasn't 60 days ago) limited to cultist vs monk, but can also occur with flagellants at least.
I have definitely converted wildmen who aren't dumb, unless they're considered dumb by default. Have also heard about hedge knights being converted, but I don't know if they were dumb. Certainly possible things changed since all of that and hopefully the person who wrote the wiki was reading the code...
Good to know the sacrifice has a cooldown period of 20 days though. Good to know when I can stray from the taverns, lol.
Can confirm this is how it works by checking the gamefiles.
You can convert lowborn or not Noble with the dumb trait.
Note that some backgrounds cant roll dumb (swordmaster, beast slayer, apprentice, bowyer, probably a couple more).
You can convert a dumb hedge knight for example, its just really hard to find someone with both dumb and good stats/stars.
wildman isnt lowborn and needs dumb to be convertable - it was changed in the last dlc and used to be possible.
