The game will always farm the best zone for you to farm, that hasn't changed. The only difference is that it'll also progress you while doing so.
Side note, bosses are a bad idea to farm online because treasure chests will get you way more money, and those don't spawn on boss levels. It's irrelevant for offline because boss zones are treated as normal zones for gold gain.
After all, that would be very easy to implement. No need for new options or buttons in the menu. Just saving the current setting of the mode would be enough. Was progression mode active, when the game was saved/closed? If yes, then use offline progression. Was it farm mode? Then use offline farming only. Sometimes people just need to have a choice to learn for themselves, even if one of the options is objectively better in every way.

So you must not have read anything at all in a while, or you are just not thinking it through. That's not catering to the ignorant, giving them what they want or think they want is more or less a side effect. Giving the choice to do the wrong thing enables comparison, you can only learn from mistakes if you are able to make mistakes. Also, that option is already there, it is just not consistently applied when offline. A consistent effect is better than an inconsistent one.
