Easy way to get 200 lightning dodges.
I spent about 15 minutes and got it upon the first try easy.

Go to the northern Thunder Plains area just after the inn. Stay to the south of that area and just above the separation between the exit to the inn and the exit to the southern Thunder Plains. You'll be just South of a lightning tower and there should be a small crater to your right. Stay in this location, just above the separation of the exits and nearby the crater.

The lightning here will have a pair of lightning strikes that happen about 2 seconds apart from each other followed by about a 3 second pause, making this a very quick way to get dodges. This is consistently the case in this area, just make sure to position Tidus back above the exit separation each time he dodges to ensure he stays in the location just above the exit separation.

When I did this myself, I did it with the music and audio on, and WITHOUT counting. This is important because counting only makes your brain focus on numbers instead of dodging.

NO COUNTING, it's important not to count and just focus on the dodges, press pause to rest a minute and return to it ONLY after each pair of strikes occurs, otherwise you'll be out of sync when you unpause the game and might miss a strike.

This location has no ambient sounds at all, not even lightning strikes other than the ones you are focusing on for dodging.

I spent about 15 minutes to ensure I got enough dodges in. By the time I went to the counter at the inn, it told me I had 328 dodges! I cashed in, never to look back!

that's not the easiest way - that is you don't have to walk and just push the button
just go to the square with the cactuar stone where cannot jump

also counting makes it even easier - when you make marks on a sheet
and pause the game inbetween - when you get tired of pushing the button

I used a crater in the first area with similar properties. I'll have to compare these though as it sounds like this location is a bit faster. Will also have to check out the cactuar stone area, even though I'm guessing it's slower.

Alternatively, here's a spot I've used about a year ago.
You can use https://steamcommunity.com/sharedfiles/filedetails/?id=2936306102 this set of craters near the save sphere at the Southern portion, and follow https://steamcommunity.com/sharedfiles/filedetails/?id=2936306209 these moves to trigger 2 Lightning Strikes at the same spot per run-around:
  • White Dotted Arrows is your starting point from the nearby Tower;
  • Blue Area is the Lightning Strike zone;
  • White Arrow is where you have to step out-and-in the area to immediately get a 2nd Lightning Strike;
  • Green Arrows is one path you can take to kill time in-between 2 Lightning Strikes. It's just long enough to give you a new Strike when you reach the Blue Area again;
  • Orange Arrows is another path you can take to kill time in-between 2 Lightning Strikes. Nice path to change things a bit if you get bored, but this path is short enough that it will screw up the timings if you're not careful and try to hug the craters too much.
  • (You can also go back to safety under the Tower if one of the Lightning Strikes becomes off-sync. Just run around the Tower a bit and retry.)

If memory serves right, I had an average of 2 Strikes / ~10 seconds (between start of 1st and start of 3rd Strike) so it would make it about 17 minutes to reach the 200 goal, still boring but not too bad since you know where both strikes happen.

I also noticed something strange in your explaination:
  • 328 Dodges in 15 minutes makes your spot 2 Strikes / ~5.5 seconds.
  • 3 seconds of running time between each set of Lightnig strikes, plus 2 seconds between the two Strikes themselves.

The screen flash + dodge already last 2 seconds, meaning the minimum is 2 Strikes / 4 seconds without player movement so.. these two things can't be true at the same time.

Maybe you under-estimated the total time spent?
Maybe it's your in-between Strikes timings that are over-estimated? Maybe a bit of both?

I actually had to do that back when I played the game on my laptop because there was a terrible input delay which made it totally impossible. So for some people it could just be difficult for reasons outside their control.

Only in a technical sense, because who cares?

The equivalence suggested by a statement like the one you made is pretty ridiculous. It's like saying using loaded dice when you're playing craps against yourself at home is the same as using loaded dice when you're playing craps at a casino. It's not. You might technically refer to it as "cheating" but they operate in entirely different dimensions. Cheating in multiplayer and "cheating" in single player really have almost nothing to do with each other except for technical details.

In fact you could even question whether it's even possible to cheat yourself in the first place, by the very concept of the word. And I mean literally - not figuratively.

Agreed.

Certain tasks in life are absolutely ridiculous, and work-arounds should be used if available. Why waste the time, energy, effort, and money? Because time is money!

Well, that's all well and good there, lady. However some of us here don't really pay no mind to accomplishin' annoyin' tasks and whatnot.

Who cares tbh.

Few things are as overblown as "sense of accomplishment". It's being unduly fetishized by a culture obsessed with productivity.

Don't slave yourself to some kind of vapid expectations. If YOU value it, that's fine - do it because it's something YOU want to do and think has value to YOU. Not because of some abstract - or worse, communal - "value" that you feel is being imposed onto you. These are all meaningless unless they correspond to a personal conviction as well. And if they don't... screw 'em.

The promise of the redemptive pleasures of hard work is just another means by which we're being distracted from self-reflective, critical introspection.

Nah, I'd use the script.

Though, thinking about it some more, in most circumstances I'd indeed do the task, as silly as it is. However, lightning dodging in particular is one of things that I did once in my life when I was a child, and I don't think I need it ever again.

There is an auto-skip mod on nexus and honestly, if you value your lifetime, just use it.
