You don't have to kill it at all.

1. Is there an AP Limit
after that you cannot Level any more aka not Move on the Grid?
2. For One-Eye you must have strong Characters
what is the fastest way - like Cactors in Bikanel?

There's a 99 cap on current sphere levels (additional AP gained is lost until you spend them) but there's no overall cap.

Mimics in Omega if you can't kill One-Eye. You don't even need Godhand to do those (though Godhand is super easy to get) it simply makes it that much more profitable. They're trivially easy to kill even if you go there instantly.

Mimics in Omega if you can't kill One-Eye. You don't even need Godhand to do those (though Godhand is super easy to get) it simply makes it that much more profitable. They're trivially easy to kill even if you go there instantly.

in Omega - there are so many strong enemies with annoying abilities

A Cactuar drops 1,500 gil.

A Mimic drops 50,000 gil.

It's not even a question. Just run around the save sphere in Omega and have First Strike to escape if you can't handle something. Though with the right strategy the enemies in Omega are actually way less of a problem than they seem, even if you go there early (one tip is to use Provoke on Spirits, to stop them from using their Poison Mist). You can skip enemies like Malboros until later, but Mimics are very common enemies in the upper level so you really shouldn't be running into a lot of problems.

THX - I will try both
for the start - I am more interested in AP - that you can get easily from overkilling Cactuars
in Bikanel there are 1 to 3 Cactuars per Encounter
bringing everyone in and with Bahamut at the end you get 36000 AP per Fight
for everyone - 1 or 2 steps in the Grid
also you can steal for Auto-Haste
so I can get fast to the Monster Farm - where you can fast level and get money

If you're not strong enough to farm in the monster farm yet, you shouldn't really have to farm exp specifically. Just focus on catching monsters for the monster farm which you'll need to do anyway to unlock the extra bosses, and by doing that you'll get more than enough experience to either start farming one-eye, or at the very least to farm don tombery a bit until you get strong enough to farm one-eye.

with my strategy it took me 15 min to overkill Chimaerageist

Sure, but what have you gained from being able to kill that fiend now?

Don't get me wrong, play the way you want and enjoy the game the most, but make sure you understand the "milestones" you're actually after in the end. The main goals you should be working towards are:

1.) Capture every fiend 10 times to unlock Nemesis in the monster arena
2.) Unlock the Solaris Weapons for the Characters that you want to use
3.) Become strong enough to farm One-Eye to get the weapons to farm Don Tombery

You are working on number 3.), but 3.) can be achieved nearly passively by working towards goal 1.), which is why "only" grinding experience for a long time is kind of a waste of time. You could be getting those Exp AND work towards 3.) to unlock Nemesis at the same time, instead you're only grinding exp and will still need to work towards 1.) in the future.

1 of my goals is to overkill every boss
a. i got the celestrial weapons
b. i levelled 15 min
c. i opened the monster farm and overkilled the first boss
2 now i just need anima to overkill one eye
dropping more items
and weapons with 3 slots

yeah - but Omega is just annoying - so i get ribbon first
Cactuars just gave a faster kick to start the monster farm
also my characters are still weak and i collect the other aoens and waepons first
like overkilling geos - was perfectly timed
