I usually do get Gatta killed, but purely because it's more interesting. I get your sentiment, totally - a pet peeve of mine is the character trope where the young guy gets told to wait in the car but he wants to prove himself and gets out anyway etc. etc. And that usually doesn't get them killed, which I find annoying; so seeing some comeuppance makes me fist-pump. But that aside it's also more interesting to see Luzzu distraught and share in Wakka's pain, having some younger brother figure die in a futile fight against Sin. That's way more interesting, narratively, than just having the old mentor with baggage simply not survive. Eh, whatever.
Ya, gatta goes a bit crazy when he dies. Understandable, but not very interesting.
