You can also randomize starting stats and Aeon stats but it's apparently incompatible with the above:

There's a more comprehensive difficulty mod for PS2, but the creator refuses to port that to PC because they're one of those "JRPGs belong only on consoles" or "Remasters suck original game is all that matters" people, or something. Can't force them, I guess.
For X-2 there's also Gundora's Hardcore Mod[www.nexusmods.com] which has more changes than just enemy stats, but it's not without its problems. Hasn't been updated in 2 years so it's probably been abandoned by now. But it's better than nothing I suppose.
