The game features japanese as a selectable option (as that is its original language).
So as you said Japanese-dub + Japanese-text it has exactly what you want.
What does not work out of the box would be selecting different audio and text independently, but this is what the mod UnX enables.

If you think it is a good idea to censor something cause at some point in the distant past (like the time of your grandparents) in some parts of the world it was used as an insult - yeah then you better stop breathing cause that might be an insult to somebody.
When you select "japanese" it is for BOTH - everything is japanese now.
Other languages like German have german text but use the english audio.

There was the person that simply lied about this, and you even saw the answers and the option and didn't think that maybe changing the language would workd ( as both the game and the forums told you it would )
Without the mod, you can select language in the launcher, and that will change BOTH text AND audio to whatever you select (though I think audio is limited to EN and JP other languages will default to EN audio).
If you got a crash just from switching the language you should verify file-integrity, if it is from UnX then you might want to use the stable-release and not the latest version (and check that you actually got it from the right source and followed the install-instruction and not some reddit-post).
And yes, j-a-p is indeed a slur against Japanese people. If you want a shorthand to refer to Japanese things, the accepted one is "jpn", or even just "jp"
