Guess you could also count the first encounter with Geosgaeno, though you just get a cutscene and escape after a few turns, so I wouldn't.
2. Geos Gaeno - Overkill = "-"
1. Polyp - with ??? Overdrive (before the Boss can even attack)
2. Oblitzerator - use the Krane, Lulu Overdrive
3. Efrye Altana - Steal, Phoenix Feather, Wakka Overdrive (before the Boss can even attack)
However I like to strike for Overkill - also saved 1 Phoenix Feather
They have 2,500 Overkill Value.
So you would need to build up Strength first and kill Biran first.
The reason you can't overkill Ammes is that you can't actually increase your damage prior to fighting it. You can't grind and you can't increase your stats. With the stats and gear you have, even a maximum random roll critical hit isn't enough to overkill Ammes.
With bosses later in the game (like Biran and Yenke) you have all the time in the world to level and improve your stats. Overkilling them is trivial, because it's purely a matter of stats.
So you have to find another way before the fight - like in the Caves
Sinspawn Ammes you need to hit over 1000 to overkill. Auron's Overdrive doesn't hit that high that early, and since there's no sphere grid access at that point nor access to items that can hit that high or increase his damage, there's no way to hit over 1000.
Geosgaeno obviously you can come back later and overkill it, but in that initial scripted battle you can't.
Or hell, just something like a Shining Gem.
He seems to jump from the "Airship" killing himself all the time.
But - you don't know if the Eater survived and is still eating Chocobos.
Maybe there are different Talk Options or Shop Prices if you actually Overkill the Eater.
Also - you don't know if Jekkt pushed him "Off the Cliff" or lost before.
Since the Group survives falling "Off the Cliff" you can assume the Eater survives.
The other Option would be that Jekkt lost and the Eater dies "All Ways" you defeat him.
Since the Eater never appears in the Game again.
