Since Biran and Yenke's HP scale with Khimari's that fight is a cakewalk if you don't level him up. Just make an armlet with SOS Regen/Protect/Shell/Haste, lancet the hell out of both of them and spam Ronso Rages.
It's not necessary to swap in all party members, but it can be useful earlier in the game before you get a healthier supply of e.g. Friend Spheres, Teleport Spheres, Black and White Magic Spheres, and so on - that you can use to teach a more diverse set of abilities to your main party members.
Kimahri has a lot of potential, but his route through the grid requires planning and effort (and liberal use of Key Spheres) otherwise he rapidly becomes useless.
Tidus, Wakka and Rikku are your three party members that you use underwater, and if you are taking on the postgame challenges, will usually be the only members you use, due to Wakka's Attack Reels overdrive and Rikku's Mixes, so there's that.
Aeons' stats scale with Yuna's, and aeons are almost always insanely powerful through the whole game, right up until the postgame grind when they become glorified meatshields.
Lulu can be benched because Black Magic is more valuable than Lulu herself. If you don't have anyone else using Black Magic though, then Lulu can be very useful throughout the story, as much like the aeons, magic only drops off towards the end.
Auron almost never sees much use for me, as other members are often faster, though his break skills can be useful. However if you collect the Jecht Spheres later in the game then Auron has an Overdrive which will always inflict Full Break so you don't need to level him for that exactly (though he may die from lack of turns afterwards lol).
The bottom line is, it is optimal to level everyone up, but not strictly necessary. It will be easier however if you can figure out a way of plugging the gaps that you're missing by not levelling up a particular character.
I too find it tedious to level everyone, but often find myself doing so. The last few times I've played I tend to take Kimahri through Rikku's grid for Steal & Use then Return over to Wakka's side, and I have Yuna teleport over to Lulu's area around the -aga spells and drop Lulu.
This time through I'm saving up sphere levels to shortcut through Wakka's grid with a Lv.2 Key Sphere to get to the -aga spells and Flare early. I've just got him there now and while he was useless while storing up levels, he's now become a beast both figuratively and literally ;p
Those being Tidus, Wakka and Rikku. spoiler maybe? shrug
Leveling Yuna comes in handy because as she gains power so do her summons, so you'll definitely want to level her up as you may be relying on her summons alot.
Really depends on areas where you can only use certain characters.
You might regret that on Mt Gagazet when he fights alone Vs 2 Ronso. :D

Yuna is good for summoning aeons to soak up damage or if you plan to use Zanmato

You can never use him and just spam overdrive abilities via lancer to beat them in seconds.
