Generally in FF games, as long as you don't run from random encounters you shouldn't have to grind at all.
People generally do grind to make the game a little easier or to grind gil, but for the most part assuming that you're just playing like normal you'll be at the correct power level for each boss.
If you skip encounters, you'll get to bosses relatively underpowered, and might have to grind a little before you can actually beat the bosses.
That said; In FF10 a solid strategy was a lot more important than sphere levels past a certain point. Assuming you can use your skills correctly you should be fine beating every boss a bit undertuned.

Lies! There is one boss you have to grind for and its Evrae (whatever its name is) on the airship for the first time. If you don't have the 3rd rank magic spells for Lulu, it is nearly impossible to beat.

Also I think there are no sphere grid challenges? Although you probably need to steal stuff to actually do it.
Bosses are encounters. You won't be fighting them either. No encounters means exactly that you will only experience the story.
