It's possible to get 100% in one game, and that will unlock a special cutscene after the ending (which will by definition be the "good" ending).
But you don't need 100% to get a "good" ending. What ending you get depends on certain actions taken during the story, not completion % (though of course certain actions will automatically give % or make you miss out, depending).
Note that there's more than 100% available; however the extra % beyond 100 are only available on a second playthrough using the New Game Plus option - without spoiling too much there's one big decision in the middle of the game that sends you down one of two paths. One of them allows you to get 100% in one game, the other does not. In New Game Plus you can take the respective other path and get % beyond 100 (though it won't display more once you get to 100).
Rather than raw %, what matters most is certain things you do (or don't do). Those will translate into % by virtue of how the system works, but there's no real "threshold values" you need to worry about.
If you want to check what you've missed, use the FFX-2 save viewer website[rngeoff.com] - it allows you to upload your savegame file and will tell you what you have and what you missed.
Whether or not you want to restart is up to you. Even with a guide it's easy to miss little things and screw yourself out of 100%. Lots of different save files can help with backing up. But IMO at least the 100% cutscene you get is pretty minor and very short. It's nothing huge. Heck, the cutscene for getting 100% on the Creature Creator is a lot cooler (though that requires two playthroughs, it can't be done in one).
Just hope that what you missed isn't one of the more essential things to get Episode Complete in an area (tied to item rewards at the end) or related to the ending (though IIRC that's not until Chapter 2). If you just miss a couple minor things here and there it won't be 100% but you'll get the rewards and the ending. All you miss out on is the 20 seconds or so of the extra cutscene.
But since you're still in Chapter 1, if you do want to see everything then it's better to restart now rather than later ;)
