Overdrives work differently from character to character.
Auron's overdrive has a button sequence to input - successfully inputting that in the correct order adds a special effect to the overdrive: Dragon's Fang: delay enemy turn / Shooting Star: eject enemy from combat / Banishing Blade: inflict Full Break on enemy / Tornado: extra damage
Tidus' overdrive has the moving bar that you need to hit the center of. Succeeding will do extra damage, and succeeding faster will do more; it also changes the number of hits on Slice & Dice (6 on success, 3 on fail) and Blitz Ace (bonus attack on success).
Wakka's overdrive is a slot machine, the goal is to match symbols on all three. For Element Reel matching 1 will hit one enemy with non-elemental damage; matching 2 will hit one enemy with the element you matched; and matching all 3 will hit all enemies with the element. Attack Reels matches numbers, and those will be the number of attacks performed, or double that if all numbers match. Status Reel is like Element Reel just with statuses added instead of elements. Aurochs Reel has mixed symbols from the other reels, and a bonus symbol that will result in a big attack if matched on all 3.
Lulu's overdrive involves spinning the right controller stick, which increases a counter; how many spins you need to add 1 to the counter depends on Lulu's magic stat and the spell you selected for the overdrive (more powerful spells need more spins to go up by 1). The spell will then be cast once for every counter, at reduced power.
Yuna's and Rikku's overdrives don't have special inputs. Rikku's overdrive has a tutorial in-game, and Yuna's overdrive is similar to her regular summon except the summoned aeon gains a full overdrive bar immediately.
Lulu's you better not mind ruining the grips on your right joystick because it's Paddle Battle all over again.
The X-2 table is a lot more complicated, and the effects are quite different; not just the effects from X don't carry over the same way (like stat boosts) but also simpler ones like healing items etc.
The wiki is a good source for that, and most of the other questions raised here.
