As for FFX I don't think one can switch between single and multi targeting modes. In FFX-2 it can be done with the directional commands. When in target selection it is possible to switch between allies and enemies with directional input, pressing in the opposite direction activates multi targeting (All enemies <-> single enemy <-> single ally <-> all allies).

FFX does not have multi-targeting. Everything targets either one unit or all units, and that is built into the spell; you cannot change it.

FFX-2 allows you to multi-target with most spells. Simply hit right/left on your directional buttons to switch between single and multi-target. Note that abilities that only work on yourself (like many of the buffs) generally don't work on multiple targets; and that some abilities that you can cast on others also don't work on multiples.
