Long answer: probably not with the level of technology currently available, but with ancient tech it might not have been entirely unfeasible. Technology like Vegnagun was crazy powerful (it could blow up the entire planet after all), though of course "regular" Bevelle tech was not enough to stop Sin originally.
It's not entirely clear what WOULD happen if you were to destroy Sin without involving aeons, since so far the Final Aeons have been the only thing powerful enough to destroy Sin. But that doesn't seem to be inherently related to them being aeons so much as them being really powerful - we do, after all, end up using "conventional" weaponry to if not destroy then at least severely weaken Sin. Which, to be fair, might also be related to the whole Jecht connection thing, who knows.
In-game explanations about the mechanics behind Sin are vague at best. It's an armor crafted from the souls of the dead. It makes Yu-Yevon invincible. The only thing that can pierce that armor is the Final Summoning. Except of course not really, since we end up doing it (quite literally) without it. So the truth could be anything, really.
Personally, I don't really see a reason why it COULDN'T be done, at least theoretically. Whether or not weapons capable of doing it exist (outside of Vegnagun, which seems to be a fair bet for being capable enough albeit also uncontrollable) is a different question. The weapons present at Mi'hen at least were quite evidently insufficient, and not by a slim margin.
And the game even shows that. As you mentioned operation mihen has shown just how capable the "machina" are. Sins defense seemed to be struggling. Later we use normal swords and basically a toy-ball to hurt sin, and blast of body-parts with machina.
I say if for mihen they get together more of those they might have had a chance.
As for YuYevon - we do not know if he/it is capable of doing much. As long as no aoen or summonor is nearby he should not be able to built a new sin that easily, so he might die from (a lot of) normal gunshot.
I'd be curious how much differently the world would have turned out had Sin been defeated at Operation Mi'ihen. Would Yuna still have finished her Pilgrimage? Would the truth/lie of the Final Aeon ever have been revealed? Would the corruption of the church ever been rooted out?
