Step 2: Use Jecht Shot, get up 1-0.
Step 3: Hide behind own goalie.
Step 4: ???
Step 5: Profit.
It's all about having the right team. Recruit good players, and you're mostly there. Which players those are depends on where you're at in the story - if you've got the airship, then you're all set for maximum pwnage.
The key to stupidly easy wins are two players: Brother and Tidus. Brother is one of the best MF in the game, and one of the fastest players available at low levels. His speed is what makes everything possible. Grab the ball as soon as you can, and pass to Brother. Then use his superior speed to round up EVERY enemy player, getting them to follow you in one big clump. Once you have all of them on your tail, swim diagonally across the map to the top right corner, essentially the maximum distance from the enemy goal. Once there, and with sufficient distance to the pack following you so they won't engage, pass the ball to Tidus. Swim right into the enemy goalie's face, and score. Repeat at will. The reason you pick Tidus is that sometimes you do encounter an enemy defender or two - in which case Jecht Shot comes in to break the game wide open and remove 2 defenders entirely for easy goals.
Using that strategy, it is trivial to get through the early brackets of Blitzball without as much as getting an enemy goal in, let alone lose a game. I can say without exaggeration that I have not had the enemy score against me, ever, in what must be over 6 or 7 years now.
As for the rest of the team, it pays to have strong players still, since you do actually need to get possession of the ball, and bad luck does happen as well. Some of the top choices include:
Defense: Ropp (best defender in the game), Naida, Kyou, Kulukan
Forward: Vilucha, Shaami, Larbeight
Goal: Nimrook (best goalie in the game, but annoying to get), Miyu, Durren
Note that who's the 'best' often varies depending on what level you're at. If you're using the reset trick for minimum games played to unlock all of Wakka's stuff, you'll never really go past lvl 25-35. High-level Blitzball can be very different, but is only really ever seen by players who play it for the game itself, as there are no unique prizes once you have all of Wakka's overdrives/sigil.
Also, regarding Nimrook - while he is undoubtedly extremely powerful even at low levels, recruiting him requires you to expire his contract with the Psyches by repeatedly conceding exhibition matches, and then reloading over and over until they don't renew his contract. This can take a long time, and frankly, is often just not worth the hassle. If you're using Brother Fishing as described above, the enemy will almost never even get a chance to shoot, so your goalie is almost irrelevant. And the easily recruitable alternatives do a perfectly fine job for those few occasions where the enemy does get through.
EDIT: I agree with Hinnyuu's guide when using brothers speed to throw defenders off their positions, hes very fast. use this method with the center attack formation, and pass to the open man near the goal.
