As @ramsza said, the skill "Ability Attack" will make any monster you hit with it drop Ability Spheres instead of any other item they'd normally drop (there's one for each type of sphere, except Luck). Using that, you can make sure you never run out. The skill is available very early on both the Expert and Regular Sphere Grid, meaning you should have no trouble activating it very quickly.
Note: these skills replace the type of drop, but not the amount. That means any enemy dropping large quantities of items (not equipment) can be made to drop the same amount of stat spheres. This becomes relevant late in the game when you are farming the Monster Arena and leveling required vast amounts of spheres.
The birds in Besaid drop power spheres. And in Kilika the monsters only have power, speed and mana spheres as possible drops. But there no really big monsters there except the optional boss.
