Is it possible to return to past locations before the airship?
I wanted to dive right into the blitzball but was hoping to recruit some other players before really diving in. Looking it up and I found that after defeating sinspawn Gui I can return to Besaid, Kilika, and Luca by climbing up the boxes by the destroyed machina along the beach. I see the boxes but I can't find a way to climb up them. Is this something they removed in the remastered edition or am I missing something?

stand to the right of the boxes and then just walk up them

They didn't change anything, but the way up the boxes can be a bit tricky to recognize. Also, you may need to progress enough to actually see everything that happens at the beach, i.e. up to the point where you depart for Djose Temple.

The Remaster did not change ANYTHING in terms of gameplay, only graphics, interface, etc.

I've bumped into this minor change recently: "Saving (anywhere) after visiting Omega Ruins locks in those odds. Once set, they cannot be changed thereafter for that playthrough. The exception is the PS4 and PC HD remake versions, where players can reroll to get the 99 Warp Spheres by using the save in the ruins."

Okay fair enough, I did not know that. Probably irrelevant to 99.999% of players anyway.

If memory serves, in the original game, you had to complete the Djose trials and collect Ixion. There is a crusader on the beach who won't move out of the way of the boxes until after this scene, but once done, you can backtrack as far back as Besaid, getting some good Blitzball players along the way. (Tatts and Vilucha immediately spring to mind)

I don't know if this restriction is in the HD remake as well, but if you can't get up the boxes and there's still someone standing there, then you should try progressing until you see the cutscene where they show the next destination is the Moonflow.
