Finding IP without consent isn't exactly legal, and it isn't easy to either.
Its pretty easy actually.

I just sort of question why and/or how they would be able to acquire your IP, since you aren't directly connected (unlike a Terrorist Hunt game).
The IP should just be going to Ubi's servers, not directly to you.
However, I've never tried monitoring the IP traffic with Wireshark while playing any of my games, just stuff for work.
