If it's the delivery type, the turn in will be on the Bulletin Board at the destination station. The same board you would have got the "quest" from.
However there are also trading/supply missions which don't give you cargo - they just say some station (usually the one you're in) need X quantity of Y, and if you accept, it's up to you to figure out where you can buy that cargo (use the filtering options on the Galaxy Map to see which systems sell it), how to get there, then heading over there, spending your own money to buy it, then heading back to deliver it to the station the mission said to deliver it to.
You can grab some stuff in space, or you can stole cargo from players /npc
Or you can give your cargo if a pirate want it
And you can give your cargo to a friend too
The jettison cargo hotkey? Unbind that. So far there is pretty much never a situation you want to use that - if you need to actually drop cargo in space you can do it easily enough from the info panel on the right. That hotkey mostly just makes people lose their cargo in space when they forget what the bindings are and they press it by accident.
