Discovery scanner - used to "pinging" systems, which allows you to know roughly what a system contains.

Full Spectrum System (FSS) scanner - used to properly scan the system after a discovery scan to see exactly what is there.

Detailed surface scanner (DSS) - used to discover life and signals on planets.

Manifest scanner - used to scan ships to see what cargo they are carrying

Kill Warrant Scanner - used to see if a ship has bounties in jurisdictions other than the one you are in (just targeting the ship will only reveal any bounties in your current jurisdiction).

You left out data link scanner and comp scanner.
Data scanner is for scanning mega ships and settlements/poi on planet surfaces.
haven't found a use for the comp scanner yet, so not sure what that's for.
