There's a button to recalculate the route.
Either a heavier ship due to more fuel or the station recalculated your Cargo.
Just unplot and replot the route. Usually fixes it for me as it recalculates your route.
Ultimately I've plotted one to a star nearby no problems, them when I was near there, it plotted for me the last jump. This gave me an idea that if there's maybe a 'narrow' path to your destination, route plotter has problems with it. In my case it would have to do a 'crowbar shaped' path instead of the usual jagged-straight. Of course this is just my supposition with no proof and no further study backing it.
