They will be needed if you decide to improve your weapons or modules through engineering.
To gain access to engineering you will need to unlock engineers.

The game has many learning curves and it won't take you by the hand to show you the way, so if you need more help keep calm and just ask on the forum, there's plenty of people in here who will help you out.

I forgot about synthesis that's a very good point as it can be a crucial part of the game when you're low on fuel with the srv or the canopy get busted and your oxygen level is getting low.

There are engineering materials, and mining minerals/metals. They are different, although they are not easy to distinguish at first, when you begin to play the game. For example, Zink is an engineering material, while Platinum is a mining metal that can be sold. Don't worry, you will learn to differ them in time.
As a rule of thumb: if it goes into your cargo hold, it's a mining mineral/metal, and you can sell it. If it goes into a special storage separated from your cargo hold, then it's an engineering material. One can't be turned into another one, they are different and they serve different purposes in the game.
You can also go to a station commodities market sale page and check the minerals and metals section. Those will list minerals/metals that you can sell and that are not engineering materials.
