At higher levels there are strong winds that would potentially cause a serious flight issue, especially if you hit a storm which would put storms on Earth to shame, potentially destroying your ship.
As you dived down the gas just gets more and more compressed by pressure until you are at a depth where your ship would simply collapse under the pressure.
If you could get further down you'd encounter a layer of liquid gas. Assuming you could get through that, you might find a core of molten rock.
Gas giants are not friendly places to fly into.
Here's hoping FD do a good job of representing this in game when we get planetary landings.

Those things are so big their gravity well is intense. Though... I'm not sure if not playing the game because of it would behoove you. It would be safer to think of them like big very slow moving monsters, which are essentially harmless - provided you keep your distance.
If you can manage that, some are actually quite scenic. With that being said, i'd still rather park in an orbital to eat lunch while i'm playing rather then to park in space near one of the giants in question.
In reality there are many things that can easilly blow up your ship that are much harder to avoid.
You may also want to consider avoiding the explorer job. Gas giants may be big, but there are much much bigger monsters in the galaxy.
