Look for 2001: A Space Odyssey, Space:1999, Moonraker, and anything by Gerry Anderson, especially Thunderbirds, UFO, Space Precinct, anything where Meddings was given authority over the model making and the great, great Ken Adam had set design.

One way or another, these good folks had an influence on George Lucas and Steven Spielberg, who in turn were the mentors to the people that created this generation's SF.
The inspiration for Elite though is 2001 A Space Oddyssey. If you haven't seen that, where have you been? :D

if you only watch one Star Trek series The Next Generation is THE choice closely followed by Voyager. You can ignore Enterprise and DS9 completely as they are trash.
TBH that bit's quite a hotly debated topic even among fullborenerd trekkies (you know the type, they dress up as vulcans or klingons for ANY sort of fancy dress thing). I for one actually enjoyed Enterprise more than Voyager (though I liked voyager as well), and going back and watching the next generation these days, it's almost as cheesy as the original series (which I also used to love). Deep Space 9 wasn't terrible, but it wasn't great either. The films (all of them) are miles better than any of the TV series though.
It's animated but it captures the feeling of space sims and space strategy games far better than any real tv show. It's also one of the highest rated animes ever made so you're not just watching some random crap.
