Every ship turns better on the Yaw, which is vertical movement. Pitch movement, or turning to the sides horizontally, always yields diminished turning capacity. Imagine how a plane in atmosphere flies, and you have got it.
None of this applies when you do not have flight assist turned on.

not really massive, but a difference yes. on the cobra for instance from E to A thrusters you go from 400 to 430 boost speed. I wouldn't call that "massive" performance gain, but there are other factors that make it worth it: heat signature, the damage it can absorb, etc.
That 30km difference could mean the difference between life and death in some situations.
Also, its not just speed, its turn rate. Difference between B and A thrusters on some ships can be quite noticable, never mind between E and A.
