Give it a few hours at least
Forget yaw. It's very slow. Roll and pull back to turn.
Also be aware of the sweet spot, the prime turning speed indicated by the little bar next to your velocity indicator. When you're at the sweet spot, pulling the stick back and hitting the boost button will make you turn very fast.
It's not good enough to just have your throttle in that position, you've got to give your ship a mo to match the velocity with the throttle (FA on), or you've got to match it yourself with reverse thrust (FA off).
Full pips to engines also helps a little, as does the class of your engine and other internal components (B grade is excessively heavy and bad for handling).
Also, rebind the controls to suit you. I've probably spent more than an hour reconfiguring my controls, then doing again, then tweaking a few bits, then tweaking some other bits and so on (I keep thinking of ways to make it better, then have to relearn them but hey ho).
Every other space game controls like SC.
So, act like you're flying a jet in Battlefield (albeit with lateral/vertical thrusters) and you'll do it just fine.
That, or turn flight assist off, and become an elite pilot.
