As to whether people have done so, yes, many people have been out to the various edges of the galaxy.
Earlier in the year 1000+ flew to the far side of the galaxy and the end of the far arm. Not quite to the edge, but the stars were getting very thin. Some went a bit further as well as far as they could get.

thats basically why best atronomers across globe workin with FD to make this happen, aside "doing some astronomy" in their worktime, flying Elite and home and fighting/fending-off space aliens invation in nearest suburbgs.
Just keep going in that direction, and you'll eventually get further than anyone else has ever been. Unfortunately, you won't know you're futher than anyone else anywhere else other than in your heart.
Add to that, you will never actually leave the system you started flying from, even if you travel a full light year.
