I'm thinking about upgrading from the Sidewinder. Would an Eagle be good for mining, or cargo missions? Or should I save up for something like an Adder, or a Hauler?

The Adder is the cheapest ship you can Core mine in. You need a Medium hardpoint to core mine. Adder is the cheapest "multipurpose" ship; it can mine, run Rare Goods cargo, can function in Low Resource Extraction Site (RES) combat, and explore to reasonable degrees.
The Sidewinder, Eagle, Type 6, Dolphin, and Type 7 only have Small hardpoints and thus cannot Core mine.
The Cobra III is a better Adder, just more expensive. It can mine, run Rare Goods cargo, and do decent enough in combat to get you a better combat-oriented ship like a Vulture or Chieftain. Cobra III not the best at combat, but its fast and agile enough to get you money with police assistance.
Laser mining, the first real laser mining rig you can get is Imperial Clipper but requires rank grind. Small ships are just too low on cargo hold to really make money doing it; Platinum relies on selling very large quantities. Core mining, small ships like the Adder and Cobra can do, because they only need 16 tons of cargo room to make good money. Same with Rare Goods trading: you only need 14-20 tons of cargo to run them.
Adder is a straight upgrade of Sidewinder, I recommend it to anyone that's not dead set on specializing into combat or exploration. Cobra III is a straight upgrade of the Adder, again a solid recommend unless you're dead set on combat for money.
