What do you mean?
all gimbals do is give you a bit more target tracking over fixed weapons in exchange for less damage.
How do you make them target automatically though?
they track any ship you have currently targeted....but it's about a 20-30 degree arc.
Oh right. It's just that, in some vids, it really does look like some turrets can be set to automatically follow and fire at the enemy.

turrets, YES. gimbals, no.
set turrets to "my target only" mode and they will follow a targeted ship but will not fire until you press fire.
however once you press fire they will NOT STOP unless you switch to another fire group, retract hardpoints, or kill the target.
Where exactly is that setting?
Gimballed, and Turrets are completely different.
You can set Turrets to "Fire at will" (right hand holopanel) and they will fire on any hostile (red) target that they have line of sight to, automatically.
Gimbals on the other hand will only fire when you physically pull the trigger button.

A good rule of thumb is:
Fixed > Gimballed > Turrets
in terms of damage inflicted on hit.
also the inverse in terms of severity of how much other players will make fun of you for using them :D
