It will certainly increase your FoV, which is good for many games. It does put more pressure on the graphics card, so if you're running Odyssey you'll want to have a beefier than average computer.
Well I have a triple monitor setup but it's a hassle to set it up for a game so I was hoping someone else whose done it could chime in on if they like it or not.
Obviously lower frame rates in CZ/settlements/you name it.
In iRacing I get a solid 60 fps everywhere on the triples, no matter what's on the screen, and no crashing. iRacing is nowhere near as detailed as Odyssey though.
I used to run iRacing in forced borderless mode, with three independent Windows desktops, but now I use Nvidia's panorama display thing to merge all three screens into one.
On my main PC I have triples but I run the game only on the middle one, and use the others for streamers/steam contacts/inara/etc. In that case the three can be all different resolutions.
One Monitor for Elite Dangerous, one for Inara and the third to watch Netflix while supercruising 😉
Tipple monitors have the frame gaps in between that are not desired for most people.
FPS FOV doesn't scale well. It has the fish eye view if FOV is too high, which makes the sides very far stretched.
Use Tobii Eye Tracker 5. It is superior than VR and it gives you dynamic FOV as you head/eyes move.

It's expensive, but still cheaper than 2 extra tfts or a VR headset.
Even freetrack and facetrack noIr work with some hardwarehacking (DIY IR reflectors & webcam with IR filter & IR lights).
AFIAK a face tracking app for I-Phones is also aviable for a low price (10$ ?).
playing the game on one of them and watching streams or movies on the other screens is the play.
