Even groups with several pilots can only really change it by a few % per day AFAIK.
So it doesn't update daily, and you CAN get a lot of influence as a single player - just not after you get 100% reputation, it seems.
INF changes depend heavily on the system population. If the population is in the hundreds of millions and up you're barely going to move the needle.
Also, if you try to raise inf by turning in bounties or exploration data, only the first X counts. (About 2 million for bounties) Lots of small hand-ins are worth more than one large one.
And, as someone else said, new influence values update once every 24 hours. If you're looking on Inara check the last update, because if nobody else has been to the system recently you're looking at old figures.
FX, some ticks are now every hour, or on system jump out & back in.
