Cobra mk4 or Keelback are decent choices for a starter mining ship, although I'd get an AspX instead (decent miner and one of the best ships in the game for exploration).

Here is the barebones Cobra MK III Exploration build. You could upgrade the fuel scoop, add a heatsink incase you get to close to a star and an additional shield booster if you wanted. https://s.orbis.zone/1m4l
Neither of these builds have weapons, if you get intradicted or see trouble simply run.
This is the best medium ship outfitting for mining. The Python: https://s.orbis.zone/1m4r
Once again no weapons. I'm not here to fight I'm here to mine.
