Or you might have accidently set flight assist off - in that case turn flight assist on and your ship will allign trajectory / destination automatically. (This should cause the message adjust trajectory)
Also keep an eye on the mass lock --> you find it on the bottom right together with cargo scoop and landing gear - all the must be off to jump.
If you are flying to a target in SC, keep at full throttle until the timer gets to 0:07 (you can do this at 0:06 as well but you need to be a bit more careful). Once at 0:07 throttle down to about the middle of the blue zone, you want to see a stable 0:07. This will get you to your target without overshooting. Once within range you get a message that its safe to drop. Usually at 1Mm, but if there are no large masses nearby this can be bigger.
No idea why your throttle is stuck at 30 km/s, that would normally only happen if you are close to a large mass that is affecting the operation of your FSD.
Can you upload a video? We could perhaps give you better pointers.
"stuck at 30km/s" ... hmm, maybe you have not set throttle at all. It is possible to fly a ship having set forward thrust and back thrust. But thrust will do nothing in supercruise and could also cause your issues.
Please check your control bindings. Look into Flight Throttle and set the correct joystick axis here - if you use KB/M you can set increase and decrease throttle.
If it's not obstructed, press J.
If it is obstructed, unlock the destination in your naviation pannel, press J, and move somewhere else within the system, then try again.
Once you're about to jump, simply throutle up.
If you booth you'll generate a lot of extra heat and hurt yourself.
