I've not actually tried using the dual stick method myself as I have a nice analogue thumbstick on my throttle I can use for lateral and vertical thrust control.
When using dual sticks, how do you handle the constant readjusting of throttle speed while fighting?
I fly FA OFF which makes majority of the speed rely on boost and boost bleeding.
I dont have a fixed position like with hotas (25%, 50% etc), so you always have to apply preasure on the left stick (y axis is my acceleration axis).
Basically, when the stick is rest (center), the speed is 0.
i have that hotas with pedals and I dont think there is enough buttons on joystick for dual setup
There are more than enough buttons, even without using the ones that require you to move your hand away from the stick.

u wont even have problems with the Throttle ... as there is one at the Joystick
I dont use the mini throttle control on any of my sticks.
I binded the Y axis on the left stick (forward/backward) as full throttle.
Its main trigger (it has only one actually) I binded to boost.
X axis left side is laterals, right side is roll
Maybe if you really, really needed every inch of advantage in combat go dual sticks, for agile craft like the FDL I can imagine it would be a very potent combination.
I think ED isn't as "twitchy" as SCs ever changing flight model, which has its good and bad points. Also, honestly, I feel ED just has the better control system, although it may be a bit more forgiving too.
I would try just a HOTAS at first (yes, HOTAS, not a single stick, you will want the buttons), if it doesn't click with you, grab something like a t16000m for the offhand. I'm happy with mine.
