What's a good build for the Imperial Courier?
Right now I have a fixed beam on the nose and two gimbled MCs on the wings, but I feel like I might be able to get more out of it.

If you want some "real fun" - put 2 Plasma Accelerators (engineered for efficient) and a Rail Gun. You can take down iCutters with that!

Agreed. That is one great idea. Although I've never used the iCourier myself, Plasma Accelarators are brilliant if you don't miss your shots. In my FAS, I was certain that two Beam Lasers and two Multi-Cannons were great, but I was terrible at combat until someone told me to ditch that loadout and go for Plasma Accelerators and Pulse Lasers instead. Rail Guns are great too. Best advice someone had ever given to me. And you can even engineer them...

I tried LR rail courier, it couldn't handle the heat
I tried eff plasmas, the spread of heardpoints made the DPS very inconsistant.
I tried flechette build, it doesn't seem to work on larger ships
I just decided I'm gonna make a "no escape" ship with FSD reboot rockets and Ion disruptor mines and 2 interdictors (1 LR and 1 wide arc), I might add a drag drives pack hound or frag cannon later when I test of the actual mines.

I don't ever see it viable with multiple fixed weapons...

Two pulse and an MC, or if it can handle it 2 beams and a MC., or 1 beam and 2 pulses, or 1 beam 2 MC.

Real men fit all multicannons. :steammocking:
Seriously though, my Courier has 3 multicannons on it and it's pretty fun. Might be a bit hard to try using plasmas or railguns on it because it boosts at like 760 m/s.

Flechette build works on larger ships, but some ships are much harder to hit because the shield proximity is far enough that you have to be very precise. For example, when fighting a Cutter you have to aim and hit the Nacelles. Against Anacondas and T9/10 you'll want to hit above the engines. Basically you need to find the spot where the hull is closest to the shield.

I run mine with a gimballed beam laser, gimballed multicannon and fixed railgun with railgun on secondary fire. Use beam+railgun when shields are up, MC and railgun when shields are down, just firing the railgun when I get a good shot.
