The game includes all of the stars that have been surveyed by many different organisations AFAIK, it mixes these "real stars" with then a best guess as to the rest of the galaxy, based on likely distribution of the galactic mass, this has a wide possible range though so they picked a number in this range, doesn't mean it is "right" just that the galaxy we play in is "plausible" to use the mythbusters terminology!
As NASA and others make discoveries these are often then reflected in the game, with the procedurally generated planets replaced with reality.
As an example a recent discovery by NASA showed planets in a system that we have a star in the same place in the game (as it was from an earlier survey IIRC) and while the game hadn't got the planets exactly right, it had manged to get the total mass of the systems bodies very close and it was a reasonable representation of it in game. I believe they said they'd update this system in a future patch - cant' remember the name right now
Betelgeuse is in the game and theres a black hole where UY Scuti would be.
Also there are 400 billion or so STARS, not objects. Since many of the stars have bodies around them that means there are probably well over a trillion objects.
Betelgeuse is in game. I've been there. Not sure about UY Scuti...
