Basically the 7 gives more rebuilds per bay over the 6. This is only really something to bother with if you are planning on staying away from stations and in combat for such a long time that you will need many rebuilds.
So, there is a use, but its pretty much an edge case. Maybe if you are going exploring and want to do lots of silly things with the fighters, then maybe also worth taking the size 7 bay.
The advantage of the 6 and 7 over the 5 is that you have 2 bays as opposed to 1. This allows you to have two different types of SLFs.
This advantage is quite good. For one, it means if one SLF is destroyed, you can immediately launch another one from the other bay, while the first bay builds a new fighter.
It also means you can have one type of fighter that you think works well for your NPC co-pilot and another which you prefer to fly yourself.
I still use it tho, it just fits nicely on my corvette and i tend to do a lot of stupid things with my fighters. >.<
