For bonus points, get Military Grade bulkheads, a Fighter Bay, some hull/module reinforcements and you're golden.
Personally, if you're only fighting pirates who come after you, I would say 4 Medium Turreted Bursts (for Efficient), 2 Large MCs, and 1 Huge MC (Corrosive). Ammo won't be a problem, just restock at any station you stop it.
A-Rate everything and the rest of the internals are up to you! I'd recommend maybe a fuel scoop and extra fuel tank, discovery scanner, and any open slots to cargo.
It's really hard to screw up a TradeCutter.

Full combat outfit is about 1 billion. So for trading, expect 6-700,000,000, possibly less if you don't A-Rate the big stuff like your Power Plant.
A 6A shield with a few boosters will keep your thrusters safe. Engineer your thrusters and the Cutter easily goes over 400 m/s. The only things that can truly take a Cutter on (in PvE) is another of the Big 3, and with 4 pips to engines, you should outrun them easily.
It made it in to the top10% of this Alectrona Imperial Society Issues Appeal Cg[forums.frontier.co.uk] in aprox 6-10 hours game time
when any NPC attacks thats not 1 of the big 3 theres no worry they wont do much damage
other CMDRs are a different story but you are safe to high wake away
