But if you want to avoid combat, there's tricks to use.
One good one is to submit to the interdiction (throttle down to 0) and the moment you get dropped out, you push everything into your engines and boost away. by the time they are ready to shoot at you you've halfway charged your FSD again and are out of their range.
Or you can get some players to protect you while hauling your cargo.

Ive traded a fair amount and use the tactic described above and have escaped virtually every interdiction unscathed; the most I've had is a couple of hits seconds before I jump. No biggie :)
This is pretty close to a peaceful way to trade.
You are right, but you can just repeat the submit, boost and jump procedure if he keeps pulling you. I've had one pilot stop me three times, one after the other. I eventually got to the station.
I get intridicted a bunch by the AI but only time I submit is when i am near a star because i was fuel scooping. If you do submit like the above guy says put your pips into engines or systems and boost in a striaght line while your FSD charges. If you need to you can add point defence or chaffs.
Only one time AI got my shields down because i was mass locked by the star while fleeing but generally my shields hold until i jump. If you win the intridiction or jump to another star the AI generally doesn't try again. I ran into human player in a Python who intridicted while scooping and submited pretty much right away because i was loosing. He shot at me a couple times but after scanning my i guess he saw that i didn't have anything so he stopped. I generally don't scoop if a another ship is near by but I thought the person was going to jump out since it was in Ashima which only consists of one star.

I find avoiding the interdiction pretty easy, but the larger your ship, the larger your mass. And a larger ship is harder to interdict.
Throttle down to just below the blue zone and avoid NPC interdiction easily every time. No need to high wake out, then having to jump back to the same star system only to be interdicted again, usually by the same guy too. If close to a sun you can try accelerating around the sun, scooping at the same time. For some reason after half a lap, the NPC is no longer to be seen.
But submitting and boosting away, (away from the sun is also worth noting) is usually the safest tactic when a large hot object is near by. You can then low wake ( target in same system) away and avoid interdiction as decribed above. Just make sure to throttle down, makes avoiding soooo much easier.
High waking close to a sun can be difficult as many targets may be concealed.
So, I no longer have weapons.
