You'll have to do some reading/watching on Dustloop.
Delay-based netcode is trash, there is no other Guilty Gear. Besides, it's probably the best iteration.
If you could post the replay file I'd love to send that in the right direction.

There is no tutorial but here's how you play the game.
Head over to training mode then practice how to move left and right, Dash left and right (Double tap left or right) Jump, Double Jump (Up then Up) air Dash (Double tap left or right in the air) and Super/High Jump (Down then Up)
P-Punch
K-Kick
S-Slash
H-Heavy Slash
Defense
Hold back to block (Important)
Hold back and any 2 Buttons (P, K ,S, H) to do a Faultless Defense
Hold back and any 3 buttons (P, K, S, H) to do a Slashback
When blocking, you can press Forward and any 2 buttons (P, K, S, H) to do a Dead Angle attack (Alpha Counter if you will)
To do a recover after an attack in the air, just press any button (P, K, S, H)
To do a Burst (Break of most attacks) just press any button (P, K, S, H) and Dust (D)
Combos
The basic combo string for most characters is P then K then S then H
but this varies from character to character and other variables.
You can perform a special attack after an attack/combo say Punch, then Kick, then 236K
Overdrives are the Supers, say 632146H. They consume 50% Meter
Forcebreaks are like Mini Supers and they are basically powered up versions of some special attacks for most characters. They consume 25% Meter
Roman Cancel
Use Meter to extend combos by pressing 3 Buttons (P, K, S) after an attack/action
There are 2 types of roman cancels
Roman Cancel (Red): Use 50% Meter(Tension) to continue a combo/pressure
Force Roman Cancel (Blue): Use 25% Tension to end an attack/action and perform another action. To practice FRC, head over to training, then open the menu (Start), then Extra menu you will see an option called Easy FRC. Change it from 0ff to 20. Your character will flash purple when you are doing a certain action to show you that you can perform a FRC

Before heading over to an online match, make sure to practice thoroughly and you can gain more knowledge on a character by watching Guilty Bits (Youtube), Watching tournament footage, reading a guide on a character here on Steam or heading over to Dustloop and checking out information on a character
After you grasp these concepts I just listed above, try out the Mission mode, specifically the first 15 missions. Its sort of a tutorial and can help you practice combos as well as practice these mechanics.
You can also play some arcade, M.O.M or survival too.
Then head over to a fighting game discord and ask for matches with people around your level. There's always new players.

You can cancel special attacks differently for each character but universally by using Roman Cancel (Press PKS after doing a special if you have 50 Tension or practice Force Roman Cancels on certain specials)
Anti-air combo.
2D -> 5S/K/etc -> Jump cancel
Not the case on every character. Some have specials or counter hits which translate to air combos. Others can combo 2D into specials like Johnny or Sol to do it as well.
