There are servers that will still let you play with your son and you use Steam and he the XBox.
They have a 2 seat saddle. And if I remember right, the rear seat faces backward. Literally meant to be a gunner's seat. Eazy peazy taming of anything airborne after that.
Three actually, they have a separate front seat too which could be used for a taming shooter. And they can cling to walls and cliffs, so you can just hang and shoot without losing stamina.
The real upgrade past that point is a sinomacrops, which requires going to a specific map to tame.
The sinomacrops is a "shoulder" pet that clamps onto a players back and gives them powered flight by flapping it's wings, gliding, and a parachute mode. I got so used to wearing one that I pretty much have to wear it all the time... I will run off the top of 5 story buildings thinking I can fly or glide down, and realize I don't have it on. Plop. Thud. Now I just wear it all the time on most maps.
It revolutionizes aerial taming. I will fly up on something else like an argy, and then just jump off and flap with the sinomacrops. I set the flyer to follow me. It makes taming things like the quetzl a snap.
Sinoma also acts as a scarecrow, and it screams at all the pest/theif dinos: The ichtyornis (seagull), the pegomastix, and various insects. The scream frightens them away, and damages insects like crazy. It can outright kill things like the giant ants.
And they're kind of a glitchy nightmare to tame. Super buggy, and prone to reaching a point where it's a lost cause taming attempt. Their taming effectiveness drops constantly and they starve to death.
