Scorpions with a high DPS build with inflict large amounts of torpor per strike and are relatively cheap to tame (they eat spoiled meat). They are good in the sense that a player cannot be fighting your scorpion and fighting the increasing torpor at the same time.
Raptors & scorpions need to be considered as expendable because they can be grabbed by eagles and carried away from your base and dropped or killed.
TL:DR
Sabertooth cats = Main defense
Eagles = Support + Air counter
Scorpions (DPS) = Cheap to tame & maintain, torpor strikes. Get a bunch as deterrent.

Stone perimeter walls (can't be destroyed for free by dinos) behind metal spike walls, a metal house (preferably with at least two layers of doors and another metal strongroom inside for high-value loot), even a couple fake 1x1 metal sheds outside with juicy-sounding labels to piss them off are hilarious and effective.
Far as keeping dinos safe goes, high walls are a good bet, or a fully-enclosed garage. Walls really only need to be wood unless the attacker is just being a jerk to kill your dinos. If it's open, you can be reasonably protected from fliers by a sentry gun or two which will shred them. High rang,e no warning, players only and place in about the middle of your courtyard near ground level so they'll only have a line-of-sight to flying targets and not waste ammo on things like rexes.
For fun, sure. But keeping 10 Dilos fed doesn't sound like fun over a long period of time.
Case 1: open air field defence
Place auto turrets they will deal with birds Maybe dropping is still possible but they can't stay over your base.
Killing
Use a dilo troopon combination maybe with a pegomestax but only if you also use auto turrets otherwise they are useless.
Both troodon and dilo are fast predators. The dilo still outrunnable the troopon isnt due to his special flying attack.
The dilo slows a bit and gives an unclear sight but the dilo is just an addition to make it more easy for your main weapon: the troopon who applies more torpor then a titanboa and knocks out in only 2 hits. Both are easy tame.
The pegomastax is to steal stuff from your enemy.
Leveling
Pegomastax: double/triple speed all the other points in health
Dilo: up his movement speed slightly. put other 90 percent equally divided in health and damage
Troopon: just like dilo, guy gots a scout option to, leave it alone in this purpose.
My experiences:
i put pegomastax on aggresive before calling them back quite some time, a very easy tame who once delivered me an ascendant crossbow
I have a room for my vault where i put this duo in and it helped me only once but it did (1/1 as the base is almost unraidable)
Otherwise
A carno can do, but focus movement speed upgrades.
Rex maybe a bit big, NO dilos or small stuff, think about atherinosaurus to, preferred even over the carno
Raptors are quite a good pick, although carryable by quetzals, but when using auto turrets
Your rex argument is completely right, they are easy to kill/circle due to their size.
I reacted because of your argentavis argument because the only thing is good for is getting your enemy meat. Argentavis will follow the attacker whereever he goes so its easy to lure them back to your base and destroying them, believe me i did this myself.
One last tip: dont build a garden but keep them in your giant base (with roof)
