Wait about 5 seconds between shots. If you miss you may need a few more. If you have a choice, use first person to shoot, improves aim of arrows.
Edit: Also have plenty of time. That will be about a 3 hour tame with just berries. Helps much to have Dilo kibble.
Anklyos are very low to the ground like scorps but don't climb well so you can probably stand on a steep rock and plink away at it with out too much effort or get it caught up in some trees. No matter what you use, go for the head! (Except on argents and pteras, dont shoot those in the head....)
Good advice standing on a rock. Ankylos also move slow so kiting is fairly easy. Same with the new doed.
