But regardless, I will just say - remember that one of Ark's greatest strengths is it's customizability. For all their mistakes, WildCard have made a few really big wins as well, and opening up config options to us players so we can adjust the game as we see fit is a huge one of those. If we wish, we can even go so far as to remove spiders from the game almost entirely, replacing them in the caves with other creatures instead.
This is one of the game's biggest assets, and I highly doubt that they would remove it from ASA when it was a big feature of what made ASE so popular. So I don't think you'd have to worry too much, OP, about that point. I have concerns about whether we'll see ASA at all, that is a distinct uncertainty right now imo. But if we do see it, I would imagine that the .ini settings such as NPCReplacements and admin commands to grant yourself boss wins and tek engrams without actually having to face the broodmother will still be available for us to use there, just as they are for us now.

I'm not aware of any mods that would replace the spider models entirely though. But Wildcard most likely won't give an option to remove spiders, so I wouldn't bet on them.
I do not have arachnophobia, but I do wonder if it's a good idea to try to get used to them and face your fear since they're not real. But again, I don't know, and if it's really bad, then you might just have to remove them entirely via config.

Not to mention on the broader point of insects, things like wasps and hornets which can give very painful stings, and mosquitoes which can carry disease. Not entirely 'no rational fear', surely.
