Some suggestions on settings you will definitely need to check out:
Tame multiplier, which will make taming happen faster. Some animals takes very long to tame, especially if they are high level.
Resource multiplier, which will let you gather more resources than default (picking up stone will yield 1 stone, but a 10X multiplier will let you pick up 10 stone)
I also played around with the day/night cycles. I made the days last longer and the nights shorter. This helps a lot early game, as you get more done and it's a risk going out into the dark, since you cannot see as far.
Then the last suggestion I have, is looking into raising your player and player dino levels so that you can reach higher levels. Engrams per level goes hand in hand with this, because one player cannot learn all the engrams, then you'll have to make sure that one learns certain engrams and the other the rest. Raising this will allow both to learn everything.
As far as game play goes, learn which animals to tame early game, as this will give you a huge advantage. Certain animals has certain advantages and some of them are easier to tame early game. This makes a huge difference.
Also, personally I like investing a lot of points in running speed, as this will save your life early game when you don't want to lose your precious gear. Later you can use a mind wipe tonic to change your stats accordingly when you are set up and can deal with losing gear if you get killed (which gets more unlikely later in the game)
My wife also started out with Minecraft (from not being a gamer at all) and are now playing games like Fallout 4, Tomb Raider, etc.
Giving them a helping hand starting off makes things easier and before you know it, she'll be running and gunning like the rest of us!

I am slowly getting her into the swing of things. She loves GTA and WoW now as well as MineCraft, but survival/exploration will always be her favorites.
We haven't played for quite a while, so I'm not up to date with all the settings anymore, but I used to know the stuff very well. If you get stuck, just let me know what you are having a hard time with. Maybe I can recall from memory and help you out.

Uh huh.... Take your shield, sword and white armor elsewhere. Some people are innately drawn into games and are good at them, others take a different style of learning curve or even enjoyment curve when approaching games and don't handle being thrown in the deep end well.
There's definitely some things in the original version of Ark which aren't friendly to newcomers, most obvious is the tame timers. (20+ hour bronto tame with berries for example which some would see as ludicrous, and it is when you think that you're spending 20 hours for literally a creature in a game that could be lost at any moment).
